Salad with Taleggio cheese, pears and walnuts

INGREDIENTS

  • 120g oriental mix salad
  • 3 pears sliced and cut in cubes
  • 150g of taleggio cheese cut in cubes
  • 1 avocado, sliced
  • 1 green onion, sliced finely
  • a pinch of brown sugar
  • 60g of walnuts
  • extra-virgin olive oil to taste
  • red wine vinegar to taste
  • 1 garlic clove, grated
  • ½ tsp salt
  • black pepper to taste

PREPARATION

In a pan, stir in the walnuts with some brown sugar and some drops of water. Cook until the walnuts are completely caramelised. When the walnuts will be ready, keep them aside in a plate. For the seasoning, mix some oil, vinegar, brown sugar, the minced garlic cloves, salt and pepper, until you will obtain a dense vinaigrette. In a large bowl, combine all the ingredients and lastly, top the salad with the vinaigrette, the caramelised nuts, and the sliced green onions.
