INGREDIENTS
- 400g large carrots
- 1 egg
- 1 tbsp extra olive oil
- 4 tbsp flour
- 1 dl milk
- 1 pinch of ground yeast
- Frying oil
- Salt to taste
PREPARATION
Peel the carrots and remove the point of them, wash them and boil them 15 mins in boiling water with salt. After 15 mins drain them, cut them into thick washers and cut the inside part of the washers, so that they will actually look like a ring.
Pour the flour in a bowl and add the salt, the yolk and leave the egg white aside. Also add the olive oil and the yeast.
Mix everything and add the milk slowly, until you will obtain a smooth batter.
When the batter is done, add the whipped egg white.
Put the carrot rings inside the batter and fry them in the boiling water. Drain them in kitchen paper, sprinkle some salt and serve them hot.
