INGREDIENTS
- Basil to taste
- Extra-virgin olive oil 100 g
- Pine nuts 1 tbsp
- 1 lemon
- Salt to taste
- Parmesan to taste
- 2 small oranges
- Black pepper to taste
PREPARATION
Peel the oranges and the lemon, then extract the slices of the citruses from their transparent skin. Now, take the basil leaves, rinse them, dry them and put the in a mixer together with the pine nuts, parmesan and the citruses’ slices and finally with enough olive oil. Mince all very finely until you will obtain a smooth cream. In the meantime, let the water boil in a pot. When the water boils, pour in the salt and then the pasta. We advise a long kind of pasta, such as linguine, spaghetti or bavette. Cook the pasta “al dente”.
Finally, let the pasta sauté in the pan together with the pesto you previously prepared. Serve it hot.
